Brie de Meaux, named after the town of Meaux, is a French cheese produced in the region of Ile-de-France located near the east of Paris in France. This soft cheese is made using unpasteurised cow's milk and traditional animal rennet. The curd is hand-ladled into moulds, followed by dry salting and a slow ripening process at specific temperature and humidity conditions.
